【 Who Is Gökhan? 】

Gökhan Selamet is the 2025 Turkey Brewers Cup Champion and a bioinformatics scientist by profession.

At the World of Coffee event, he brewed with Femobook’s A4Z and A68 electric grinders, using identical parameters to show how grinder design influences flavor clarity and body in coffee.

【 I Often Forget When I Last Charged It — The A4Z’s Long-Lasting Battery 】

Gökhan noted that the A4Z is battery-powered [1] and easy to carry around.

Speaking about its capacity, he laughed,

“The battery capacity is really high — I often forget when I last charged it.”

【 Gökhan’s Pour-Over Recipe 】

To demonstrate how different grinders impact flavor, Gökhan brewed the same coffee using identical parameters on both the Femobook A4Z and A68.

Recipe

  • Coffee dose: 15g

  • Coffe-to-Water ratio: 1:16

  • Brewer: Flat-bottom dripper

  • Total brew time: ≈ 3’18’’

  • Water temperature: 89°C

  • Coffee: Colombia Mikava / Geisha / Carbonic Maceration / Washed

** He noted that due to Jakarta's humid, low-altitude climate, he lowered the brew temperature from the 93–94°C he uses in Turkey to 89°C for this session.

Pouring Method

  • Blooming stage: Zigzag pour

  • Main pour: Circular, divided into 3 or 4 pulses depending on the flow rate

** Gökhan explained that since the A68 produces more fines, he uses a gentler pouring technique to avoid over-extraction and bitterness.


【 A4Z vs. A68 — Clarity or Boldness in the Cup 】

During the tasting, Gökhan described the two grinders as delivering distinct cup profiles:

  • The A4Z delivers a clean and transparent cup with notes of white florals, peach, stone fruit, and caramel.

  • The A68 brings out a bolder, richer cup with a more pronounced caramel sweetness and fuller body.

During the demo, Gökhan also shared his personal flavor preferences and how they influence his grinder choice.

“Some people enjoy bolder coffee. If that’s your style, just use a multi-purpose grinder (the A68).”

“Personally, I prefer a clean pour-over that lets me taste each note individually and experience the full potential of the coffee.

A high-end grinder like the A4Z helps achieve that clarity — and for me, that’s the most important part of the coffee experience.”


【 Gökhan’s Brewing Tips 】

 

1. Dripper shape influence flavor

Gökhan explained that conical drippers tend to highlight acidity, while flat-bottom drippers generally produce a sweeter cup.

2. Use a higher brew ratio for high-quality coffee

Gökhan pointed out that high-quality coffee beans often contain more flavor compounds and can handle a higher ratio (e.g., 1:16) for better extraction. 

Lower-quality beans, on the other hand, shouldn’t be brewed too strong, as excessive extraction may lead to bitterness and astringency — using slightly less water is recommended.

3. Pour gently when there are more fines

When using a multi-purpose grinder that produces more fines, Gökhan prefers to pour more gently to avoid over-extraction and bitterness.

For Gökhan, a grinder directly shapes how a coffee reveals its flavor.

He noted that the A4Z and A68 each have distinct strengths and purposes.
